Was on a baking roll today, so me and mich baked up some goodies. We made cookies and donuts! Found the recipe to making our own pumpkin spice mix, so of course we had to use it in the cookies! It’s fascinating how the mix doesn’t include pumpkins at all, but it’ll still give you autumnal feels!
If you’re interested, here’s how you could make your own!
Pumpkin spice mix
2 Tsp cinnamon
1 Tsp ground ginger
1/4 Tsp ground nutmeg
1/4 Tsp ground cloves
1/4 Tsp all spice mix
You can use it in your lattes, stir a pinch into your yogurt, or your dessert batters!
You could use your own cookie recipe for these! You could jazz them up your own way. We did it 2 ways. For the first batch, we drizzled melted dark chocolate over them and sprinkled desiccated coconut before the chocolate dries!
For the second batch, we dipped part of the cookies into the chocolate and coated that part with the coconut! Of course, you could use any kind of toppings you want, almonds, rainbow sprinkles or granola!
And we made donuts too! However, the process of making donuts takes longer as the dough needs time to proof and expand, so maybe you could bake something else while waiting!
Here’s the recipe if you’re interested in trying to make them! They’re absolutely delightful, and they make great afternoon snacks!
Recipe adapted from ‘how to make doughnuts’, by Ivy Hossack
3 tbsp active dried yeast
1 cup warm milk (43 C)
2½ cups bread flour
3 egg yolks
1 tsp vanilla extract
½ tsp salt
2 tbsp granulated sugar
¼ cup unsalted butter, softened
oil for frying– Combine 2 tbsp yeast, ¾ cup milk and ½ cup flour in a medium bowl and let rest for 30 minutes in a warm place.
– Combine the rest of the yeast and milk with the egg yolks, vanilla, salt and sugar. Add in the butter and ½ cup of flour.
– Knead in the rest of the flour – ¼ cup at a time. Continue to knead until the dough is smooth and elastic. Cover and rest for 1 hour or more.
– Roll the dough out on a floured surface until ½ inch thick. Cut out circles using a 3″ cutter, and then a 1″ cutter to make the hollow holes in the center. Transfer the doughnuts (and doughnut holes) to a cookie sheet
– Cover the donuts and allow them to proof for a further 5-20 minutes.
– Heat a 2 inch depth of oil to 360 F (180 C) in a deep, heavy bottomed pan. Fry for 3-4 minutes until golden brown, flip and fry for a further 3-4 minutes. Remove from the oil using a slotted spoon and drain on paper towel. Repeat with the remaining doughnuts and doughnut holes. Let cool slightly then glaze.
You can glaze the donuts to how you want it to taste! For this batch, we reused to the melted chocolate to drizzle over the donuts to give it a sweeter taste, and then we topped them with powdered sugar! Other option is to make it a savory donut, you can top it with some maple syrup and bacon! NOM.
